Perhaps a variation, or this needs upwards of 10 years aging (literally 2027) for this particular bottle for it to show something better. Perhaps this is just like certain Chablis 1er or grand cru...drink it young for freshness if there is ripeness, avoid the dull phase, or let it sleep for 10+ years

    April 9, 2022 - My 2nd or third bottle of this vintage. Popped and poured tonight. Beautiful nose of flowers, peaches, apricot, lemon and a slight hint of signature German Riesling petroleum wax. Bright sharp acidity but not as piercing as before. The initial fruit doesn't last on the palate and quickly descends into a realm of stony minerality with an interesting and semi intense savory finish. The additional years of aging has helped, and I think this has way more room to evolve further, but is so difficult to resist now. It's not as complex and vibrant/spicy/intense as Cuvee St Catherine, but it's a very solid baseline for this Schlossberg. I do not recommend this with sushi, but do think it will work nicely with a variety of richer seafood and to a very small extent, duck.
