Gone are any gunpowder or flinty notes. Cloudy as the bubbles stirred up the sediment in this natural wine. Notes of strawberry and minerals.

December 31, 2018 - Courtesy of VM. Lovely pink color with an odd note of a spent firework cartridge- a little sulfur, a little gunpowder, a little smoke- rather unique. Better on the palate, where one gets a nice bit of fruit, primarily strawberry. I am interested to see where this goes from here.

December 31, 2018 - 100% Pinot Noir Dijon Clone 115 picked on September 15, 2018. 3.39 pH and .99 TA. Not filtered, oaked and no malolactic fermentation. Made in the Ancestral Method which is the oldest way of making sparkling wine. No dosage added and not disgorged. Cold soak maceration for 6 hours before whole cluster pressing by hand. Epernay DV10 yeast used in fermentation. 11 bottles made. Pale white pink color. Aromas of gunpowder and flint. Clearly falling into the 'natural' wine profile. Very light bead. Rustic notes of strawberries and pink grapefruit.
