    December 31, 2021 - Classic Burgundian nose of meat, blood and forest fruits (wild strawberries, raspberry, black cherry). A soft perfumed spiciness, dirt (forest, leaf mould), touch of manure, smoke (wood burning?). Palate is very different - just pure varietal fruit. Acid is not shy, but gentle and long, driving the finish. Soft sweet spice at the end, cloves and cinnamon, ginger cake. Outstanding.
