    January 4, 2024 - Tasting 1 of #50in2024

I am fairly new to Chablis, though I do enjoy unoaked Chardonnay. I was excited to taste this wine and it did not disappoint. My first taste was simply delicious.

It’s a beautiful color, medium gold very nice with accompanied aromas of peaches and cream. Really nice acid along side taste of honey and apple and touch of sweetness on tip of my tongue. I love the finish on this wine, and despite my description it not sweet. It quite balanced. Overall, This looks and tastes elegant to me. I am going to let some of this age and compare to this tasting...if I can wait.

This is exactly what I has hoping to taste from Chablis -- harvested by hand, indigenous yeast, and no new oak so you get the taste of the grape and terroir like you are supposed to.

I just upped my rating from 90 to 91 and its going higher with every sip.

August 14, 2022 - This is very difficult to drink now. With a couple hours of air, the nose does unwind and all along it offers a lemony marine character. That said, the marine character is slightly brackish - not a sea breeze or an oyster but somewhat more fish market. The palate is locked down tight and at this stage it’s pretty unappealing with a questionably sulfur note. While this sounds like a negative note, it’s not really meant to be - this is still so primordial a wine that it’s a shame to drink it now. So don’t.
