    October 1, 2023 - That's a blast of a blanc de blanc.

    pale bright lemon yellow on the eye. fine mousse.

    In the nose, medium intensity and high complexity. Primary notes of green and yellow apple, on the underripe side. Custard and toast dominates the secondary, testifying malolactic and long maturation on lees (8 years). Finally, some ageing is visible from honey and fudge feeling. It's a brilliant nose, where the underripe fruit and the tertiary notes alternate the flavor profile, supported by the lees. Fantastic.

    In the mouth, the wine is incredibly acid (high), dry, with medium alcol and medium body. Acidity dominates the entrance, then wine opens up in the mid-palate, delivering texture and body. The aftertaste is dominated by custard and caramel/fudge, with a long complexity. Honor mention to the sparkling component of the wine: fine bubbles create tension and harmony continuously for the duration of the sip, increasing the duration of the aftertaste.

    This is a fantastic product. We can see some minor defects in the lack of fruit in the notes and a slight overreach in the acidity during the entrance, but we are splitting hairs here. An amazing product that is still being sold at a comfortable price, punching well above its current level.

    April 17, 2022 - Dsg 09/2020, 100% Chardonnay from old vines, 1g dosage, 2500 bottles.

    Vivid effervescence. Very atypical nose for a blanc de blancs, it is rather vinous with mirablelle and black fruits.

    Serene mouth, with a beautiful texture, and which combines chalky side and flavors of tropical fruits. We are far from the tracing and monolithic BdB, this one is rather warm while keeping a nice acidity which results in very nice bitters, especially in the finish with a length on the lemon zest.

    July 1, 2021 - (Disgorged in October 2020, 100% Chardonnay from 50+ years old vines in Le Fond du Bateau in Chouilly, dosage 1 gr/l)
    Lovely yellow colour with a greenish hue and with an endless stream of very fine bubbles. Chalkiness and butter on the youthful nose and with time in the glass intense minerals and some tropical notes of peaches. Smoothing lime citrus acidity on the palate with a nice and pleasant creaminess on the mid to late. Lasting finish with a nice and intense citrus zesty note. Still very youthful of course, but with a pleasant and refreshing way that matched our bruschetta with scampi perfectly. But this should reward further cellaring to open up with more mature notes of course..
