    January 27, 2024 - Into a wide bottom decanter for four hours, and served ~ 12C; enjoyed over over two days. While I appreciate the subtle nuances of marine influence, soil, an admixture of various white fruits, etc., I continually felt like I was looking for just a bit more freshness and acidity, but it never arrived to that imaginary place I had in my mind. Good, but not feeling the love at €62. That said, I'll continue to taste in each future vintage as I always find a nugget here and there. 13,0% abv. Now and the next several years. I like it, for what it is, but I have other Pecorino I prefer more than this. If you're a fan, and I often am, it's recommended
