    February 25, 2024 - Really beautiful representation of the terroir. Gave it a lot of air to soften and open it up. A lot of minerals and crushed gravel, stone, with good fruit purity, lemon, green apple. Yummy

    January 27, 2024 - Known to be too young, but could not resist a preview and to establish a reference point for the six further bottles as they rest and mature.

    Decanted and an initial glass taken at 13.5 Degrees C. Against milky blue evening sky, beautifully translucent of greenish light amber.

    Restrained nose of delicately composed and melded peach and pair skins. Perhaps a suggestion of freshly cut juicy potato.

    Light on the pallet; dry and finely grained woody. Suggestion of pale asparagus.

    Plus 20 minutes: Minerality evolving on the nose. Flintyness and oyster shell on the rear under-tounge. Woodyness has yielded to baking flour in the air and delicate salt.

    More floral with time. Yet to integrate but balanced and poised.

    Fell in presence quickly, becoming light and flowery and mild acidity. May have been better from the bottle with 20 to 30 minutes rest at this stage of its development.

    Enjoyed with a creditable freely available camembert, black grapes, original croccantini and hazelnut oat crackers. Should one be tempted, open and enjoy plus 30 to 50 minutes, and not too chilled.

    This bottle caught the short straw: naughty to have woken it so early, but a delightful intrusion into the case plus taster acquired to the cellar. Such a joy to drink, but must resist for at least another year 'till one of its siblings is prematurely disturbed.

    January 3, 2024 - Light and crisp classic Chablis. Nothing added or taken away. Green apples, Asian pear, soft and delicate palate confirms perfect balance. Highly recommended.

    Here, you unmistakably taste the Chardonnay grape. It carries more of that richness, but always with the beautiful acidity that provides a perfect balance, giving it that Chablis quality. The last time I had it, there was still a gap between the nose and the palate, and the balance wasn't quite perfect. I rated it 94+ thinking it would improve, and it has indeed. It's a beautiful bottle, and the flavors are the same as my previous tasting. Although in the citrus notes, I now had a much clearer sense of mandarin, which was very expressive. Thanks to the hint of acidity in the nose, the wine lingers for a very long time!

    NOSE: sweet pastry and papaya on Day 1, with a jalapeno pyrazine note, as well, on Day 2.

    BODY: vibrant light yellow color; medium-light body.

    TASTE: high acidity; lots of mineral, and also not wanting for fruit; some baking spice; 13% alc. not noticeable. Day 2: light jalapeno note new to the mix today. Overall, quite impressive.
