    August 6, 2022 - Kept at 55F since purchase in 2010. This was very impressive. Mousse remained though lightened up a bit over the years. Went very well with potato chips, creme fraishe, and caviar. Excellent secondary notes coming out with lanolin and beeswax. Acidity still quite present and not as bracing. Residual sugars are there and there is a nice yellow apple and pear quality here. The finish has an interesting complexity and lasts for about 45 seconds. I think this will still get better, if you have the time and did not get one of the ox'ed bottles.

Yet there was an interesting core underneath, a strong acid core, with flavors of ripe apple and honey (and yes, caramel). But I kept returning. B

    (Huet Petillant Brut) This lived up to its reputation as the leading sparkling wine in the Loire Valley. This is a Champagne look alike. Yeasty aromas with hints of grilled nuts, light citrus and saline minerality. The wine is like a pillow of Chenin on the palate with finesse only found in the better Champagnes. It floats and has a wonderful slightly sweet ginger presence. Complex would be the best word to describe this wine after it had been open thirty minutes. It also had the trademark Huet "crunch" that I have found in his secs and demis from 2002. Great balance and a wine that will siginificantly improve for many years. Dare I say twenty plus?
