  January 27, 2024 - Night one: Aromas of white flowers and lime Almost riesling like. Has definitive chalkiness as well represented both in flavor and texture. Light on it’s feet with acidity to carry through a bitter lemon pith finish. Would be nice with salty sea food
  
  Night Two: Less impressive. Feels watered down. Curious to see what tomorrow brings. I wonder in instances like this what is influencing my perception.
  
  Night three: pleasant, but certainly nothing special or memorable. Good value for Chablis, but wish for more.

  November 24, 2023 - Light golden color. Fairly muted but mineral forward nose. Notes of pear and peach in the mouth with mineral notes. Decent acidity with a medium finish. Relatively solid but unspectacular wine.
