  February 12, 2008 - I did not have much hope for this wine, as the blend is odd: Sauvignon Blanc, Viognier and Chardonnay. It was served fairly well chilled, and was at first dominated by the Sauvignon Blanc both on the nose and in the palate. Slightly grassy, with some citrus and higher acidity. So far, unremarkable. But, as the wine warmed in the bowl of the glass, using my hands to warm it up, the Viognier started coming through, eventually overshadowing the Sauvignon Blanc characteristics. The viognier components brought peach and exotic fruit into the nose, along with honeysuckle aromas. At the same time, the palate feel mellowed out and rounded itself from the Sauvignon Blanc notes. Finally, with more time and temperature, the Chardonnay could be distinguished, bringing in some vanilla and a hint of oak. Five experienced tasters shared this experience and decied the wine should be named the Chameleon for how remarkably it changes style as it warms. Perhaps it could be dismissed as a gimmick, but I found it fascinating, entertaining, and a good companion for a wide variety of foods. Each component showed varietal correctness and high quality fruit. There is clearly a devoted, mad scientist at work in this wine, and his genious shows.
