    Seemed to be humming right along despite the age. No signs of oxidization, still crisp.
    Good balance of acid and fruit, although a bit sharper than I prefer.

    August 1, 2014 - Nose of minerals and lime. Lime, grapefruit and minerals. Good acidity, could have a bit more fruit in the taste. Very nice with salmon sashimi.

    (BUTTEAUX Louis Michel Chablis) 1er Dear Friends, Last year at the en-premier tastings of Bordeaux, the most exciting wine to be traded was not Bordeaux - it was everything else...at discount prices. I was able to shake things up with many memorable deals that were tough for me to top (and that was during a good economy). This year, I would expect even more eye-opening offers. Here is a terrific start - two 2007 1er Chablis from Louis Michel at bizarre prices. These appear to be some of the lowest tariffs in years for a classic growing season so take note. I don't have access to any reviews but I'm sure they are excellent for the prices below (if I remember, the Butteaux was 89-91 or 89-92 from Burghound - I don't remember the Vaillons but the winery thinks it's as good or better). I'm off to taste 2008 Left Bank wines tomorrow and will report back (a prominent Left Bank vintner I talked with today is very enthusiastic about the vintage and claims it is one of the better years in the last decade. When I asked him to compare a vintage he said "it's a combination of 2001 and 2004" which (on the surface) does not appear to be exciting at all.
