  I drank half the bottle, put the rest in the fridge, forgot to cork it, and went out of town for three days. The half filled bottle sat in the fridge open the whole time. I had low expectations when I returned, but the carbonation had resolved into a lovely fizz, the palate put on some weight, a more bit of complexity, and lengthened the finish considerably. This tastes like real Champagne!
  
  Lasting for days on end uncovered in the fridge is a mark of real quality! I might buy another bottle, pop the cork, and let it sit in the fridge for a few days before touching it. Maybe try decanting it?! I bet this would even benefit from a few years of aging if you have the cellar space (I don't)!

  July 9, 2017 - Un espumoso con nariz expresiva, bien perfilada, hay frutas blancas, algún matiz cítrico y un fondo balsámico. En boca el ataque es bueno, ep aso cremoso, fresco, goloso y con notable longitud.
