November 2, 2018 - Light gold yellow. Nose is crushed oyster shells, fresh squeezed lemon. Palate has a lightly burnt oak entree then char-grilled whole lemons. Quite acidic in the stomach on the finish but rounded out more with extended time in the glass and with a stunning Sea Urchin and Caviar appetiser. Moderately resonant. I think this is still in its youth.
