December 20, 2019 - Bu avec la gang de FOUDUVIN de Sherbrooke
pour notre souper de décembre au resto AVV La Causerie de Orford.
Laissé debout en cave pour 2 jours.
Ouvert le matin et Mis en carafe 30 minutes, léger dépôt fin.
Remis en bouteille non bouchée pour le reste de la journée.
Complexe et dense.
Le ne zest sur les épices sucrées, cannelle et cardamone.
Un peu de fumée et de fruits rouges.
En bouche, c’est riche et velouté et le boisé est bien dosé.
Cerises noires et cassis avec du café, des épices et un peu de cèdre.
Les tannins sont bien enrobés et la finale bien longue et minérale.

May 27, 2017 - Took to a party, so no detailed notes. Spicy nose. All kinds of baking spices on the palate, along with plenty of red fruits. Fairly rich, with a very good finish. Very well balanced right now, it seems to be hitting its stride.

January 18, 2017 - Similaire aux autres bues, un peu guidoune mais fort délicieux.
Après une bonne heure de carafe, il s'ouvre.
Nez sur les fruits noirs, les épices, le tabac et le chocolat.
En bouche, bleuets et cassis avec du moka et du poivre. Les tannins sont doux et la finale assez longue. -

December 20, 2016 - Aerated with a Vinturi and decanted for one hour. Nose of blackberry, currant, mocha, cedar and spice. Black and red fruit, mocha and spice on the palate. Full bodied with long persistence. Served with top roast and a mushroom gravy.
