    August 1, 2021 - This changed immensely over four hours. At first, it was dull and muted with only some faint dried fruit aromas. About two hours later the licorice and eucalyptus emerged. Four hours in and it’s super complex—cocktail cherry, leather, dried flowers, black licorice, and dried cranberry.

    It threw a ton of super fine sediment, but it wasn’t really noticeable on the palate. The tannins are still grippy but not over the top, and the acidity cuts through any fatty meal you throw at it. Time to buy more aged Nebbiolo.

    February 15, 2021 - Remarkably fresh at age 14. Bright red cherry with tight tannin and good acidity. Nicely balanced, closing with menthol, cedar and tart cherry. There is a bit of smokiness that appears on the early finish. A lovely touch of tarriness as the finish closes out. Quite enjoyable.
