    February 25, 2018 - Domaine de Chevalier lunch (Macleay Street Bistro, Potts Point): The appearance is clear and medium garnet in colour. Tears are present.

    On the nose, the wine is clean with a medium intensity. There are well-defined aromas of bottle age (earth, wet leaves, gamey/meaty character, subtle leather), very subtle oak (smoke), and very subtle generic black fruit. The wine is fully developed.

    On the palate, the wine is dry with medium(+) acidity, medium alcohol, and medium body. The medium level tannins are soft, fine-grained, and grippy. The flavours have a medium intensity and show notes of black fruit (black plum, blackberry, subtle blueberry), bottle age (gamey/meaty character, subtle earth, very subtle leather), and very subtle oak (smoke). The finish has a long length.

    This is a very good quality wine. The flavours are concentrated and have an amazing balance with the alcohol and the acidity. The subtle oak treatment complements the flavour profile. The soft tannins have a great balance with the acidity and also complement the flavour profile. The wine shows complexity with primary, secondary, and numerous tertiary characteristics. The finish has an amazing length.

    The wine drinks well, but is not suitable for further ageing. The wine is fully developed showing a lot of tertiary characteristics. While the fruit is concentrated, and the tannic structure and acidity can support the wine further, there is nothing more to gain from keeping it any longer - drink it at its peak!

    September 21, 2015 - From Coravin. Had a crack at this bottle to make sure it was not obviously flawed prior to taking to E's for another vertical dom de chevalier tasting. On the nose leather, aniseed, biscuit, slight briny and meaty notes, also dried flowers and bonfire. with time a touch of mustiness encroach. In the mouth the wine is a little sour, leather, muted aniseed with fine talc-textured tannins. Medium length. Bit tired.
