  November 16, 2017 - This was an absolutely extraordinary bottle that we ordered off the list at Aldo Sohm wine bar, their only bottle. The cork was extracted pretty easily in one piece by a Durand, and smelled amazing.
  
  We threw it in a little carafe, but started drinking immediately, because it was so appealing right away. The bouquet was practically leaping out of the glass and was unavoidable - black olives, tapenade, roasted meat, my grandmother's creamy Hungarian paprikash sauce, and garrigue. At a bit above cellar temperature, the texture was silky like no other Cornas maker, yet with good acid. It hit its apex after 45 minutes and stayed there for a while. We left a fair amount of dark sludgy sediment in the bottle, while the carafe was clear and ruby beautiful, with the slightest tinge of light brown-orange at the rim. There's no benefit to aging this bottle longer, methinks, if stored as well as this one, it's fully mature and autumnal.
  
  This was birth-year wine for me, and ravishingly unforgettable. I doubt I'll see another bottle in my lifetime. Merci, Noël.
