Monday, May 1, 2023 - A night at the office (RL Restaurant, Chicago IL): This was flowing immediately with perfumed tones of lemon peels, apples, mint, a touch of yoghurt, pears, vanilla, jasmine, peaches, and saline. There is very good depth and definition here to the nose. It does lack a little bit of tension, but the citrus flavors work so perfectly with each other. The Medium bodied feel is deft and balanced with mouthwatering, medium+ acidity. This could benefit from a couple of years of aging, but I don't think this is one to hold for a long time. It is a lovely Premier Cru Chablis that really hits all of the spots I want it to hit.

    11/26/2023 9:01:00 AM - Nice notes! I visited the winery in January 2020 just before covid and I found the wines that I tried in bottle and cask very good . There is obviously no getting around the impact of global warming especially in Chablis but I also continue to seek out and enjoy these wines. Haven't had the Vaillons in a couple years so I will need to find one in the cellar Thx

    I did want some more flint and minerality, but this was still really lovely and well worth drinking on my end😃
