Wednesday, March 27, 2024 - 100% Xynisteri from 30 year old vines in their organically certified Mandria vineyard, located at 900 meters elevation on the south slopes of the Troodos mountain range.
Spontaneous fermentation with naturally occuring yeast. Maturated on the lees in barrel for 8 months.
NOSE: Creamier on the nose than their generic Xynisteri, less immediate but with a deeper or richer fruitiness (white fruits).
TASTE: More cooncentrated, drier, more complex fruitiness, underlying minerality. Medium bodied but I suspect it has more to unpack and yield with more time in the bottle.
OVERALL: High quality. Promising.
