Tuesday, December 27, 2011 - Cabin Dinner II (Cleveland, GA): Cork had some seepage; soft cork managed to be removed OK with what seemed like a good seal. Decanted 4 hours. Nose of red licorice, caramel, campfire, fresh herbs, but dominated by very fragrant white pepper on mid nose. Continued to open with air, adding more prune-raisin, gamy tones, and even sugary vanilla cake batter. Very tight palate despite the decant; leathery, tart red pomegranate and cassis fruit, soaked nutty wood edges; late palate has very strong astringent tannins. Improved considerably during the night. Young; acts like it needs another 10 years to really come around.
