Friday, December 16, 2022 - Australian white wine from Tasmania (68 %) and Adelaide Hills (32 %): Chardonnay. 12,5 % alcohol. Aged for 8 months in French Oak Barriques (86 % New, 14 % previously used once).

Decanted for 4 hours prior to drinking and then stored in the decanter during the night.

Light golden color.

Powerful and delicate aromas of brioche, boiled yellow apple, lemon, honey, exotic spices, sweet oak, white flowers and minerals. Powerful and fresh flavors of lemon, green apple, lime, yogurt, exotic spices, honey and minerals.

Dry. Full body. High acidity. Perfect balance. Perfect structure. Good complexity. Powerful. Intense. Concentrated. Pure.

Everlasting finish with lemon, honey and oak.

A very very impressive Chardonnay that need a good 6 hours in the decanter to fully shine. Stylistically very hard to place/describe, a mix between a top Chardonnay from Margaret River and a Chablis Grand Cru is what comes to mind, although I never had a Chardonnay from any of those regions performing this good. The wine performs best at fridge temperature but is very enjoyable all the way up to room temperature. If I had more bottles I would wait wait 5-10 years before I opened the next one. The red substitute for Yattarna must be Grange? 100/100
