Wednesday, February 22, 2023 - ABV: 14.2%. A couple of hours after opening, the nose on this wine is still pretty tight with faint notes of a soy sauce-like savory profile mixed with dark fruits. However, the characteristics on the palate tells a different story with cassis, currant, bramble berries, and plums. The acid is well-integrated, lifting the fruits, and there's still a little grip from the tannins so this wine could easily cellar for at least another 5 years. The lengthy finish leaves the fruit characteristics tingling in your mouth. I see a lot of potential in this wine so if you're planning to open your bottle, decant it for about a hour prior to serving.

2/23/2023 - Raised the score by two points (from 95 to 97). 24 hours after opening, the nose is more expressive with a Chambord-like profile. The tannins have softened on the palated and the fruit tones are exploding with additional notes of herbs and spices, especially anise. There's also a lengthier finish that's fuller and livelier than yesterday. This is a beautiful Cab and you'll be greatly rewarded if you've kept your bottle for this long.
