Tuesday, July 25, 2023 - How can something that smells so over ripe taste so dry?

Over ripe yellow apple, over ripe quince, sweet brown bread with butter, marshmallow, toasted walnuts and praline on the nose. High intensity of aromas. You smell this thinking there's going to be some big time dosage here...and then you taste it and it's bone dry. The palate adds ripe yellow peach and ripe melon and loses the nuts and marshmallow from the nose. High intensity of flavors.

Bone dry with medium + body and high acid. Nice long finish. It reminds me of a bone dry version of Cristal if that can even make sense. Drinking well now; but has potential to be long lived. Age 5+ years. Perfect pairing with lobster bisque.
