Tuesday, August 7, 2018 - Slow perlage of small bubbles in the pour, with aromas of yeast and lime. The acidity is very strong, cutting, and vivid, and sloshing the sip around the moth releases more bubbles.The swallow highlights the mouth cleansing scrubbing power of this wine. One of the few sparklers from California that could pass as a ringer in a tasting of Champagnes. Excellent fruity taste of lemon and lime. Impressively exuberant and refreshing for a 16 year sparkler, showing not a hint of butterscotch, fatigue, or decay. Reliably great with every food in a meal.
