Friday, January 5, 2024 - Light straw color. White peach and white floral on the nose. Repeated on the palate, along with mild lemon and some subtle yeastiness. Fairly fine mousse, medium body, medium+ acidity. We drank this before dinner in lieu of cocktails but I think this would show even better with food. Still young. I expect that it will develop a bit more complexity over time and as the acidity mellows out that perhaps some of the yeastiness will start to come forward. Looking forward to opening more of these after another 2-3 years.
