Wednesday, February 14, 2024 - 50% Chardonnay, 40% Pinot Noir and 5% each of Poulsard and Trousseau, some aged in barrel. All indigenous yeasts and the liqueur de tirage is from their vin de paille. Zero dosage.

Deep gold, looks like an aged champagne.

Red apple, red currant, citrus oil and biscuits. A touch of caramel. Great intensity on the textural palate.Some richness and a lovely line of acidity. Dry due to the lack of dosage but the richness and concentration indicate the wine was made with ripe fruit. Finishes long with a savoury, pleasantly earthy edge.

Delicious and very enjoyable now.

Agree with the previous points about this not trying to be Champagne (even if I said it looks like it in the glass!). It has a unique profile and is all the better for it. Great value too..
