Monday, March 25, 2024 - Although sourced from several vineyards throughout the Columbia Valley, Métier's 2021 Cabernet Sauvignon comes primarily from Candy Mountain. Comprised entirely of the varietal and aged in 40% new French oak, it is a deep-to-opaque ruby wine that offers a ripe core of cassis and morello cherry fruit that is accented with notes of tobacco, bark, black olives and savory herbs. Medium-bodied, fresh and with well-integrated alcohol (listed as 13.9%), it buttresses its flavors with medium-weight, grippy tannins and a generous aliquot of spicy oak. Dense on the mid-palate, it moves on to a medium-length, mouth-drying finish. A couple of additional years in the cellar will be helpful in softening the tannins and assimilating the oak. If it fleshes out as anticipated, a higher score will ultimately be merited. This particular bottle was Vinturi-decanted and serially tasted over the ensuing 3-4 hours. The wine showed best after the first two hours in carafe. Enclosed with a Diam 3 cork. Drink 2026-2036.
