Tuesday, April 23, 2024 - Opened at Le Soufflot in Meursault. P&P and enjoyed over lunch. Bottle designated for the restaurant.

This is a unicorn wine. No idea where else it's commercially available; never seen before outside of Burgundy. Just look at the label - the design is guided by Jean-Yve's daughter, before it's passed off to a professional illustrator to clean it up for the bottle.

The name '3+1' comes from its elevage. 3 years in barrel, before an extra 1 year in the bottle. To quote the back label itself:

"Ce vin a été élevé 4 aneés"

"Ça signifie quoi 4 pour nous? - 4, eh bien, c'est 3+1"

As for tasting notes - this actually feels like an incredibly well made Jura Chardonnay, reminiscient of Bruyere-Houillon. Natural, but not funky, very clean. Gains some weight and richness with air. Goes down very easily and was an absolute joy to drink. Would jump at the chance to try this again, but I have no idea if I will ever see this again either...

What a joyful experience to share with M, will be a defining memory for a long time. Can't wait to go back soon to continue exploring again.
