Monday, October 4, 2010 - Honey, toast and white pepper on the nose. Very nice mousse and fine bubbles, just a hint of pink. Quite dry and almost still wine like on the palate - the cab franc really shows through with lots of graphite,iron and earth along with some dark cherry fruit - ultra dry. Went quite well with an array of dishes. Did not know that Baumard even made a sparkling wine...
