Saturday, October 15, 2011 - Developing some of the tell tale signs of great aged Chablis on the nose, with a flinty hazelnut and honeyed note to match the freshly squeezed lemon, without a hint of oxidation. The palate comes across round to start, with that honeyed citrus quality revealing itself, before the laser beam of acid and crushed seashell takes over through the mid palate, to a long, long finish. This has held up remarkably well for a wine 15 years old. Will be seeking more of this, the "other" Dauvissat!
