Friday, March 9, 2012 - This started out with a very nice nose of pear and apple. It initially tasted a bit tight on the palate, but had a wonderful after taste of honey, apples and pear. However, after about 10-15 minutes it seemed to close up and get even tighter, losing some of the initial richness and flavor. My thinking is that maybe we served this a little bit too cold and did not give it enough time to open up, but it was not showing that much. Next time I am going to serve this warmer and give it at least an hour after opening before drinking. It is also clear that this is still very young and could use another year or two.
