Thursday, September 27, 2012 - While still cool and not much air, great earthiness and minerality, brilliant zippy acidity on the tongue. Digging it right out of the bottle, and it seems like it's got the stuffing to go a long time.

After another 15 minutes or so, it's closed down a bit in the complexity, but the core leafy/earthy flavours are still there and a hint of sour cherry. I'm expecting this will blossom over the next little while.

It is slowly slowly improving with air. This probably needs a few years to fully come into its own.
