Thursday, February 28, 2013 - Notes on the last 3oz taken 6 days after opening. It was best on the last day, of course. Behaving very much like a real Sauternes and ranks as my finest experience with a US interpretation.
The wine looks Yellow gold colored. The legs are Slow. It smells like Apricot, Apple, Guava, Melon, Papaya, Petrol, Honeysuckle, Orange Blossom, and Butterscotch. It tastes like Orange, Strawberry Jam, Peach, Mango, Passion fruit, Vanilla, and Honey. The body is Full. The wine has Satin-like texture. The wine finishes Long.
If you have the option of holding for several more years, by all means do so. If you open now, give a major aeration. 5+12+18+9 = 94
