Friday, February 28, 2014 - Rich, complex, focused acidity and creamy texture. Lots of overripe red apples, nuts, brioche and some chalky minerality. The mousse is a bit aggressive today but I'm sure that it will calm down with time.

Very good today, but has a promising future.
