Wednesday, December 23, 2015 - Opened to celebrate a small sales contract I received today.

Pale pink color, medium effervescence, cherry and cranberry on the nose, medium on the palate and a brief, crisp finish. Perfect amount of residual sugar (under 1%) that cuts the bite at the end - many bone dry Finger Lakes sparklers leave an acrid aftertaste, while some over do the sugar which can make it taste like Prosecco (which I personally don't care for). This is a nice balance. At $18/bottle, it's terrific for parties and you don't have to feel bad opening a few bottles. Served with spicy Thai chicken.
