Friday, June 6, 2008 - Decanted for 3 hours prior to drinking over another 3 hours. Far softer and more approachable than any other "young" (ie < 12 years old) Dunns I've had, there was some green in the flavor profile up to 5 hours after decanting, and the tannins - while very soft, and providing an elegant, bordeaux-style mouthfeel - had a sweetness that I'm not really looking to find in a cab. During the drinking window the wine continued to improve dramatically, and I'm interested in trying this again in another 2 years or so.
