Friday, April 3, 2020 - Opened this wine at Fleur De Sel with my elder god-sister to celebrate a birthday.

We had Pan seared duck liver, and poached squid stuffed with tiger prawns.

Wine was pale gold in colour with notes of toast, light cream and chips.

At 12 years of age, the wine is more settled and calm. It has shed its youth and sometimes wasteful energy, presenting a more holistic, mature and charming outlook.

The continuous fine bubbles gives testament to the quality of wine making, with a long and lingering finish. Wonderful!
