Friday, December 11, 2020 - Young in the drink window. Dark garnet color and translucent. Legs are misleading to any sweetness or high alcohol. Big and bold, dark fruit (slightly ripe plum, blackberry), dry, rich and earthy. Nice smooth finish to spite some acidity and medium tannins. At this point, I recommend chilling and 60-minute decant vs. pop & pour. It really opened up and was complimented by various cheddar blends (black truffle, caramelized onion, mustard & ale, and sage derby). This should be really nice in 2-3 years. (4-12-17-8)
