Friday, December 25, 2020 - Decanted for 90 minutes, which was a good idea. There was a touch of soy on the nose right after I poured it into the decanter. but thankfully this blew off with proper aeration. This opened up beautifully and is a mature left bank style California Cabernet. While somewhat Pauillac in style, the sweetness of the fruit is a tell tale signature of Spring Mtn. fruit. I’m glad I waited 19 years to open this bottle. This should plateau for another 5-10 years but I don’t expect it will improve much more. Drink or Hold.
