Monday, August 30, 2021 - Enjoyed with roasted garlic salmon and cauliflower mash. Big changes again for this wine from a year ago. Pine bark, cloves and underbrush aromas. Still medium-light opacity with medium body, the structure has continued to pick up. The tart fruit has completely faded, leaving mouth coating sappiness, red cherry, and a long tingling acidity on the finish. Surprised to say after my first bottle two years ago I did not expect to be liking this wine as much as I do now.
