Monday, January 17, 2022 - Opened 2 nights ago and decanted for 3 hours. Closed, chunky and rough tannins. Some hints of good fruit and good wine under the impenetrable mass of dark liquid. Put back in the bottle and vin-vac for the next night. Last night the wine was much softer but very plummy on the nose and palate and not enjoyable. Vin-vac again. This morning before considering pouring down the drain, it started with a plummy nose, but on the palate overripe and creamy bing cherry emerged. A very interesting wine that likely needs more time before my next experiment with it.
