Monday, March 28, 2022 - Beautiful rose , deep pink, Extra Brut, expected full acidity, but wonderful ripe fruit notes of winesap apple, dried roses, and ripe persimmon. Yeasty brioche adds interest, while balance maintains. Rich and creamy texture, not at all delicate, hints of mint, tobacco, and salinity through the finish, served tonight with conch salad and butter poached lobster, held up well. More quaffable than complex, but very easy to love. Two more years of great drinking.
