Friday, February 14, 2020 - upon opening there is a lovely aroma of fruit left. There is almost a sweetness of vanilla cream soda mixed with moss and earth. Initial taste is well balanced, fruity cherries and black raspberries which become slightly tannic then ends on a soft harmonious note. After an hour of a slow decant in the bottle the vanilla was gone but you were left with a blend of cherries and smoke, no acid and a smooth finish. Probably close to its peak, worth drinking now. Do not see much of an up side to waiting any longer.
