Thursday, November 24, 2011 - Very acidic upon opening. Nice mouthfeel, but wifey didn't like it first night, and I agreed it was too acidic and hot - but not from teh alcohol. It needs air. After 3-4 days in the fridge wth the screwcap on, it was much smoother. Have 3 more bottles and interested to see how they do with some cellar time.
