Thursday, February 8, 2018 - A really interesting wine. paired to braised beef seasoned with herbs de provence and the pairing worked really well, because they accentuated some interesting savory notes that were already present in the wine. dark red fruit, plenty of acidity, and enough smooth tannins to give it some backbone with a prominent and delicious kalamata olive and thyme note running through each mouthful. very much alive and in a great spot for drinking now, should probably open these by 2020.
