Strong oak flavors still stick out, the acidity often comes across as tart, the texture is several steps from caressing, the fruit is only moderately delicious, and the overall taste is not seamless. A high volatile acidity may be the main source of these problems. We hoped that prolonged tasting would resolve those problems, but alas, now we are at the last inch on the 6th day open, with little improvement.
