Tuesday, August 5, 2014 - The wine sitting in the glass started breaking down after about an hour and a half; tThe wine in the open bottle seemed to be at its best after about 2-2.5 hours depending on your preference. Flavors of mostly bitter cherries on the nose and front palate, followed by oak on the midpalate, mint on the backpalate, and some eucalyptus on the slightly hot finish (@14.8% ABV)). Medium-to-full bodied, with still tight tannins but not enough fruit to justify much more prolonged aging. Pairs very well with New York strip steak topped with an olive-garlic sauce! 89-90+
