Tuesday, July 28, 2015 - Ginsberg and Chan Singapore Steak Supreme (Wooloomooloo Steak House): Stunning showing of SQN's way with wine - convinces me that 15 years is about the time needed for a lay down of these massive bottles of pure hedonistic elixir. Nose of lavender, spice, sandalwood, honey, toast, lime and smoke. Lean, unflabby and sharply focused in the mouth, with intense fruit concentration, hints of game, chocolate, tobacco and vanilla to savour. Tapers into an elegant long but SUPER silky finish, lingers on the tongue for ages. Lightly dusted with super fine tannins. Well worth savouring even though so little of it is left..
