Wednesday, March 27, 2019 - Drank over several hours, this had a very deep, complex, alluring nose, cassis, soy, menthol, charcuterie, beef stock.
The palate very youthful (in spite of being in transition to predominantly secondary), vibrant and intense, syrupy, cassis and soy with truffle and cherry liqueur, acidity verging on shrill and very much still a tannic behemoth.
This is a very good Cabernet which cellared correctly is probably still 10-20 years from its apogee, but at the same time reminds me of why I rarely touch Cabernet and love Burgundy...
