Wednesday, July 13, 2011 - Caymus trio tasting (Thousand Oaks, Ca): Very dark red-violet. Nose of heavy toast American Oak, with ripe plum, chocolate, raisin. Medium tannin, low acidity. Very oaky and a bit ponderous compared to the fuit intensity initially on the palate. Gets smoother with a couple hours airing, and chocolate covered red cherry fruit really comes forward. Tasted next to the '07 and '08, it's the hippo of the trio.
